Preparation

  1. Serving size:
    11 oz (calculated)
    Notes: 1 1/2 cups; sufficient as a main meal
  1. In a large skillet over medium to high heat, brown the beef, about 5 minutes.
  2. Add the chopped onion, green and red bell pepper and zucchini and continue to cook for about 5 minutes.
  3. Add the tomatoes and sliced Jalapeno pepper and cook for another 3 minutes.
  4. Add the seasonings and cook for another 5 minutes.
  5. Turn off the heat and stir in the grated cheese.
  6. Season to taste.
  7. Garnish with sliced spring onion and serve.
  8. You can also top it with shredded Iceberg lettuce or use the whole leaves as wraps.
  9. You can also serve it with sour cream or guacamole.

  11. You can store the dish in an airtight container for 5 days in the fridge or up to 3 months in the freezer. For best results, thaw overnight. Reheat in the microwave or in the oven.
