Preparation
- Serving size:11 oz (calculated)Notes: 1 1/2 cups; sufficient as a main meal
 
- In a large skillet over medium to high heat, brown the beef, about 5 minutes.
 - Add the chopped onion, green and red bell pepper and zucchini and continue to cook for about 5 minutes.
 - Add the tomatoes and sliced Jalapeno pepper and cook for another 3 minutes.
 - Add the seasonings and cook for another 5 minutes.
 - Turn off the heat and stir in the grated cheese.
 - Season to taste.
 - Garnish with sliced spring onion and serve.
 - You can also top it with shredded Iceberg lettuce or use the whole leaves as wraps.
 - You can also serve it with sour cream or guacamole.
 - You can store the dish in an airtight container for 5 days in the fridge or up to 3 months in the freezer. For best results, thaw overnight. Reheat in the microwave or in the oven.
