Preparation

  1. Serving size:
    13.50 oz (calculated)
    Notes: 5 zucchini planks, 3/4 cup of turkey and 1/2 cup of avocado mousse

    The meat

  1. Cut the turkey breast into bite-sized chunks. You can of course use chicken, pork or beef if you prefer.
  2. In a large pan over medium-high heat, fry the turkey with the chopped bacon and onion, about 12 minutes. Ensure the meat is cooked through.
  3. Season with paprika, curry powder, salt and pepper.
  4. The avocado mousse

  5. While the meat is cooking, blend together the avocado, minced garlic, finely chopped sun-dried tomatoes, as well as the lemon juice and herbs.
  6. Stir in the quark and season to taste.
  7. The zucchini

  8. When the cream is done, cut the zucchini in half crosswise and then into thin slices lengthwise. You should get about 5 planks per serving.
  9. Once the meat is done, remove it from the pan and set it aside. Cover with foil to keep it warm.
  10. Sear the zucchini planks in the same pan, about 2 minute on each side.
  11. Serve the turkey on a bed of zucchini planks, topped with a generous dollop of avocado mousse.
