Preparation
- Serving size:13.50 oz (calculated)Notes: 5 zucchini planks, 3/4 cup of turkey and 1/2 cup of avocado mousse
- Cut the turkey breast into bite-sized chunks. You can of course use chicken, pork or beef if you prefer.
- In a large pan over medium-high heat, fry the turkey with the chopped bacon and onion, about 12 minutes. Ensure the meat is cooked through.
- Season with paprika, curry powder, salt and pepper.
- While the meat is cooking, blend together the avocado, minced garlic, finely chopped sun-dried tomatoes, as well as the lemon juice and herbs.
- Stir in the quark and season to taste.
- When the cream is done, cut the zucchini in half crosswise and then into thin slices lengthwise. You should get about 5 planks per serving.
- Once the meat is done, remove it from the pan and set it aside. Cover with foil to keep it warm.
- Sear the zucchini planks in the same pan, about 2 minute on each side.
- Serve the turkey on a bed of zucchini planks, topped with a generous dollop of avocado mousse.
