Preparation

  1. Serving size:
    12.40 oz (calculated)
    Notes: 1 chicken breast (6 oz or 170 g raw) and 1 cup of salsa

    Marinating the chicken

  1. Pound the chicken breasts to an even thickness or cut them in half horizontally.
  2. Mix together the minced garlic, chopped cilantro, olive oil and spices for the chicken's marinade.
  3. Coat the chicken in the marinade. Let marinate for at least half an hour or even overnight.
  4. Preparing the salsa / salad

  5. Chop the avocado, tomato, onion, deseeded jalapeno and cilantro.
  6. Toss in the lime juice and season to taste with salt and pepper.
  7. If preparing ahead of time, store in an airtight container in the fridge.
  8. Finishing the dish

  9. Grill the chicken until it is done, about 3 to 5 minutes per side. Alternatively cook in a large pan over medium-high heat.
  10. Serve the grilled chicken with a side of salsa.
