Preparation

  2. Temperature: 400 °F

    The filling

  1. In a large pan over medium-high heat, brown the beef, about 5 minutes.
  2. Stir in the spices and the water and let cook until the beef is cooked through and the water has fully evaporated, about 10 minutes.
  3. Season to taste.
  4. The cheese taquitos

  5. In a large bowl, mix the three cheeses.
  6. Line a baking tray with parchment paper.
  7. Divide the cheese mix into portions (about 1/4 cup each) and make small mounds (diameter of about 3 1/2 in or 9 cm). Work in batches, leaving space between each cheese portion, as it will spread while baking. The rounds will have a diameter of about 5 1/4 in or 13.25 cm.
  8. Bake until the cheese has fully melted and starts to brown, about 6 minutes.
  9. Let cool for 3 minutes or so, then add about 1/3 cup of filling and roll as tightly as possible.
  10. Do not let the cheese cool fully, as you won't be able to roll them anymore. When making multiple servings, you can roll the taquitos from one tray while the next one is baking.
  11. Cover the taquitos with foil to keep them warm while working on the other taquitos. You can also reheat them in the oven when they are all done.
  12. Serve, for example with some guacamole and a side of vegetables.

  14. You can store the dish in an airtight container for 5 days in the fridge or up to 6 months in the freezer. If possible, thaw overnight in the fridge. Reheat in the microwave or in the oven (350 F or 175 C, about 5 minutes).
