Preparation
- Serving size:9.80 oz (calculated)Notes: 1 pork chop (4 oz raw) plus 5/8 cup of creamy garlic spinach sauce
 
- Season the pork chops with paprika, salt and pepper from both sides.
 - In a large pan over medium-high heat, heat the oil.
 - Sear the seasoned meat, about 3 minutes on each side depending on the thickness of your chops. Check that the meat is cooked to your liking.
 - Remove from the pan and set aside.
 - Reduce the heat to medium.
 - In the same pan, melt the butter.
 - Add the minced garlic, chopped onion and Italian seasoning.
 - Cook for a minute or so, then add the stock.
 - Bring the stock to a boil, then reduce it for about 5 minutes.
 - Stir in the cream.
 - Add the fresh spinach leaves and cook until they wilt, about 3 minutes.
 - Stir in the parmesan, letting the sauce simmer until the cheese melts through the sauce, about 2 minutes.
 - Season to taste with salt and pepper. If you like it spicy, you can also add red crushed chili pepper.
 - Add the pork chops back into the pan and reheat for about 2 minutes.
 - Serve sprinkled with some freshly chopped parsley.
 - Enjoy by itself or with a side of vegetables or salad!
 - As there's ample sauce, it also goes really well with rice, pasta or potatoes, or - for a low-carb option - cauliflower rice or mash or low-carb noodles.
 - You can store the dish in an airtight container for 3 days in the fridge or up to 6 months in the freezer. If possible, thaw overnight in the fridge. Reheat in the microwave or on the stovetop.
