Preparation
- Serving size:10 oz (calculated)Notes: 3/4 to 1 cup of very filling beef stroganoff
 
- In a large pan over medium to high heat, brown the ground beef, about 7 minutes or until it is cooked through. Stir occasionally to break it up.
 - Remove the meat from the pan and set aside. If there are liquids in the pan, discard them.
 - Reduce the heat to medium high and melt the butter in the pan.
 - Add the sliced mushrooms, chopped onion and minced garlic and cook for about 5 minutes. Stir occasionally. The garlic should brown slightly, and the onions and mushrooms should become tender.
 - Add the broth, beef and sour cream.
 - Stir in the xanthan gum so that it is evenly distributed. It will help thicken the sauce, especially over time.
 - Bring to a simmer and cook while stirring until the sauce has combined and thickened, about 4 minutes.
 - Season to taste.
 - Serve, optionally garnished with greens, such as parsley or chives.
 - You can keep the dish in the fridge for up to 5 days and in the freezer for about 3 months. For best results, thaw the beef stroganoff overnight in the fridge. Then reheat in the microwave or on the stovetop.
