Preparation
- Serving size:12.10 oz (calculated)1¼ cups (by recipe creator)
- Cut the chicken into strips.
- Grate or finely chop the garlic. Alternatively, use fresh ginger.
- Marinate the chicken in the garlic and the oil in the fridge for at least half an hour or even overnight.
- Cut the carrots into thin strips.
- Cut the spring onions diagonally into slices.
- In a large pan over medium high heat, cook the chicken (including the marinade) until it is just done, about 5 to 8 minutes. Remove from the pan and set aside for later.
- Add the oil to the pan and reduce the heat to medium.
- Add the carrots, as well as the white part of the spring onions to the pan and cook until the carrots start to soften, about 5 minutes.
- Add the spices, cream and peanut butter. Bring to temperature until the peanut butter dissolves.
- Add the spring onion greens and the chicken.
- Cook until the carrots and spring onions reach the tenderness you prefer,.
- Season to taste. For a spicier version add some chili. Curry powder also goes well with this dish.
- Serve by itself or with a side like rice.
- You can store the dish in an airtight container for 3 days in the fridge or up to 3 months in the freezer. For best results, thaw overnight. Reheat in the microwave or on the stovetop.
