Preparation

  1. Serving size:

    Marinating the chicken

  1. Cut the chicken into strips.
  2. Grate or finely chop the garlic. Alternatively, use fresh ginger.
  3. Marinate the chicken in the garlic and the oil in the fridge for at least half an hour or even overnight.
  4. Completing the dish

  5. Cut the carrots into thin strips.
  6. Cut the spring onions diagonally into slices.
  7. In a large pan over medium high heat, cook the chicken (including the marinade) until it is just done, about 5 to 8 minutes. Remove from the pan and set aside for later.
  8. Add the oil to the pan and reduce the heat to medium.
  9. Add the carrots, as well as the white part of the spring onions to the pan and cook until the carrots start to soften, about 5 minutes.
  10. Add the spices, cream and peanut butter. Bring to temperature until the peanut butter dissolves.
  11. Add the spring onion greens and the chicken.
  12. Cook until the carrots and spring onions reach the tenderness you prefer,.
  13. Season to taste. For a spicier version add some chili. Curry powder also goes well with this dish.
  14. Serve by itself or with a side like rice.

  16. You can store the dish in an airtight container for 3 days in the fridge or up to 3 months in the freezer. For best results, thaw overnight. Reheat in the microwave or on the stovetop.
