Preparation

- In a large pot over medium-high heat, brown the beef, about 5 to 10 minutes.
- Add the chopped onion and bell pepper and cook for another 3 minutes.
- Push the meat and vegetables to the edges and add the tomato paste, chili powder and cumin seeds. Roast the tomato paste and spices while stirring continuously for a minute or two, then stir everything together.
- Add the chopped jalapeno and minced garlic. Cook while stirring until the garlic is fragrant, about half a minute.
- Deglaze with the chopped, canned tomatoes and beef broth.
- Bring to a boil, then reduce the heat to medium or medium-low and let simmer for an hour.
- Season to taste.
- Enjoy, for example topped with some freshly chopped cilantro, shredded cheese and a dollop of sour cream.
- Chili is great for preparing ahead of time, as it tastes even better reheated.
- You can keep the chili in the fridge for up to 5 days and in the freezer for about 6 months. For best results, thaw the chili overnight in the fridge. Then reheat in the microwave, on the stovetop or in the oven.
