⅜ cup Tomato paste, canned, no salt added
3 tbsp Chili Powder, spice mix
1½ tsp Cumin seeds, ground
3 tbsp Jalapeno Peppers, Chili Pepper, Chile, raw
2  (ea. 0.11 oz) Garlic, raw
2⅔ cups Tomatoes, red, canned, in tomato juice, no salt added
3 cups Beef broth, stock

Preparation

  1. Serving size:
    11 oz (calculated)

  1. In a large pot over medium-high heat, brown the beef, about 5 to 10 minutes.
  2. Add the chopped onion and bell pepper and cook for another 3 minutes.
  3. Push the meat and vegetables to the edges and add the tomato paste, chili powder and cumin seeds. Roast the tomato paste and spices while stirring continuously for a minute or two, then stir everything together.
  4. Add the chopped jalapeno and minced garlic. Cook while stirring until the garlic is fragrant, about half a minute.
  5. Deglaze with the chopped, canned tomatoes and beef broth.
  6. Bring to a boil, then reduce the heat to medium or medium-low and let simmer for an hour.
  7. Season to taste.
  8. Enjoy, for example topped with some freshly chopped cilantro, shredded cheese and a dollop of sour cream.

  10. Chili is great for preparing ahead of time, as it tastes even better reheated.
  11. You can keep the chili in the fridge for up to 5 days and in the freezer for about 6 months. For best results, thaw the chili overnight in the fridge. Then reheat in the microwave, on the stovetop or in the oven.
