Preparation

  1. Serving size:
    10 oz (calculated)
Notes: 1 slice of cauliflower and ground beef pie, 1/8 pie
  2. Temperature: 356 °F
  1. Remove the stalk from the cauliflower without breaking it into florets.
  2. Microwave it until it starts to soften, about 10 minutes.
  3. Alternatively steam it or cook it in salted water. Remove from the water and let drain and steam out on a baking rack.
  4. Clean and chop the pepper.
  5. Slice the spring onions.
  6. In a large bowl, combine the ground beef, vegetables, egg , vegetable stock, mustard and paprika.
  7. Line a cake pan with parchment paper. I used one with a diameter of 28 cm or 11 in.
  8. Spread half of the vegetable and meat mix in the pan.
  9. Put the cauliflower in the center of a cake pan.
  10. Spread the remaining vegetable and meat mix around the cauliflower.
  11. Sprinkle the cauliflower with turmeric.
  12. Slice the 4 cherry tomatoes in half and place them around the cauliflower with the cut-side down.
  13. Bake for about 20 minutes.
  14. Sprinkle with the grated cheese, then bake for another 20 minutes.
  15. Remove from the oven and let sit for a couple of minutes before transferring to a serving platter and slicing.
  16. Enjoy!
  17. Meal Prep Tip

  18. You can store the dish in an airtight container for 5 days in the fridge or up to 6 months in the freezer. For best results, thaw overnight in the fridge. Reheat in the microwave or in the oven.
