Preparation
- Serving size:12 oz (calculated)Notes: 1 cup of grits, 3/4 cups of mushrooms and walnuts; sufficient as a main meal
- Temperature: 400 °F
- Slice the mushrooms, chop the walnuts and mince the garlic.
- Put everything in a bowl, add the spices and oil and toss until everything is evenly covered.
- Put on a baking tray lined with foil and roast in the oven for 15 minutes.
- The mushrooms should brown without burning.
- In a food processor, blend the raw cauliflower until it resembles rice.
- Put in a pot with water and steam for 5 minutes. The cauliflower should still have some texture, so that it resembles grits more closely.
- Stir in the cream and cook for another 3 minutes.
- Add the shredded cheese and butter and stir until the cheese and butter have melted.
- Season to taste and serve topped with the mushrooms and walnuts.
