For the grits
5½ cups Cauliflower, raw
½ cup Tap Water
1 cup Cream, fluid, half and half, 12% fat

Preparation

  1. Serving size:
    12 oz (calculated)
    Notes: 1 cup of grits, 3/4 cups of mushrooms and walnuts; sufficient as a main meal
  2. Temperature: 400 °F

    For the topping

  1. Slice the mushrooms, chop the walnuts and mince the garlic.
  2. Put everything in a bowl, add the spices and oil and toss until everything is evenly covered.
  3. Put on a baking tray lined with foil and roast in the oven for 15 minutes.
  4. The mushrooms should brown without burning.
  5. For the grits

  6. In a food processor, blend the raw cauliflower until it resembles rice.
  7. Put in a pot with water and steam for 5 minutes. The cauliflower should still have some texture, so that it resembles grits more closely.
  8. Stir in the cream and cook for another 3 minutes.
  9. Add the shredded cheese and butter and stir until the cheese and butter have melted.
  10. Season to taste and serve topped with the mushrooms and walnuts.
