1 tbsp Coconut Oil
¼ cup Onions, white or yellow, raw, chopped
3  (ea. 0.11 oz) Garlic, raw
1⅜ cups Tomatoes, raw, chopped
2 tbsp Ginger, peeled, raw
7½ tsp Jalapeno Peppers, Chili Pepper, Chile, raw
1 tbsp Garam Masala Spice Mix
1 tbsp Cumin seeds, ground
1 tbsp Turmeric, ground
½ tsp Salt, Kosher salt, table salt
1⅞ cups Coconut Milk, canned
1 lb Halibut, fish, raw, fillet

Preparation

  1. Serving size:
    11.40 oz (calculated)
    Notes: 1 1/2 cups of soupy curry
  1. In a large pot, heat the coconut oil over medium heat.
  2. Fry the chopped onion until translucent, about 2 minutes.
  3. Blend the garlic, ginger, chili pepper and tomatoes. If you do not have a food processor, you can also finely chop the ingredients.
  4. Add the spices to the pot and fry for half a minute.
  5. Add the blended garlic, ginger, chili and tomatoes and fry for another 3 minutes.
  6. Add the coconut milk and bring to a boil, about 5 minutes.
  7. Chop the fish into bite-sized chunks.
  8. Add them to the pot and let simmer until the fish is just cooked, about 3 minutes.
  9. Stir in the lime juice and most of the cilantro.
  10. Season to taste.
  11. Serve topped with the remaining cilantro.
  12. Enjoy by itself, with rice or, for a low-carb option, with cauliflower rice.
