⅔ cup ½ tsp Coconut Milk, canned
¼ cup Cocoa powder, unsweetened
3 tbsp Xylitol, Birch Sugar, granulated

½ tsp Cinnamon, ground

Preparation

  1. Serving size:
    4.90 oz (calculated)
    Notes: a bit over a 1/2 cup of mousse; sufficient as an indulgent dessert
  1. Using a fork, mash up the avocado flesh.
  2. In a saucepan over low to medium heat, mix the coconut milk, cocoa powder and xylitol.
  3. Heat up only gently until the coconut fat has melted and combined with the other ingredients.
  4. Remove from the heat and stir in the vanilla extract, cinnamon, salt and avocado.
  5. Use an immersion blender until you get a silky smooth texture. Alternatively, use a food processor.
  6. Season to taste.
  7. Enjoy warm or let set in the fridge. For a quick fix, you can also put the pudding in the freezer for about 15 minutes.
