Preparation
- Serving size:4.90 oz (calculated)Notes: a bit over a 1/2 cup of mousse; sufficient as an indulgent dessert
- Using a fork, mash up the avocado flesh.
- In a saucepan over low to medium heat, mix the coconut milk, cocoa powder and xylitol.
- Heat up only gently until the coconut fat has melted and combined with the other ingredients.
- Remove from the heat and stir in the vanilla extract, cinnamon, salt and avocado.
- Use an immersion blender until you get a silky smooth texture. Alternatively, use a food processor.
- Season to taste.
- Enjoy warm or let set in the fridge. For a quick fix, you can also put the pudding in the freezer for about 15 minutes.
