Preparation

- Chop the onions, carrot and celeriac. In a large pot over medium-high to high heat, melt the ghee and brown the vegetables in it, about 5 minutes.
- Reduce the heat to medium to medium-high. Push the vegetables to the sides to roast the tomato paste in the center for a minute or so while stirring throughout. Then mix it with the vegetables.
- Now make some space for the paprika and roast it for half a minute or so. Be careful not to burn it.
- Deglaze with the wine and the broth and release the caramelization from the bottom of the pot. Bring everything to a boil.
- Add the chopped beef chuck and the bay leaves.
- Let simmer over a low to medium-low heat for about 2 hours. Do not put a lid on the pot.
- Remove the bay leaves and season to taste with salt and pepper.
- Optionally garnish with some freshly chopped parsley.
- Enjoy this dish by itself or with a side of potatoes, Spätzle, dumplings or pasta.
- Goulash is even tastier when reheating. So it's a perfect dish to prepare in advance.
- You can store the dish in an airtight container for 5 days in the fridge or up to 6 months in the freezer. For best results, thaw overnight. Reheat on the stovetop or in the microwave.
