Preparation

  1. Serving size:

  1. Chop the onions, carrot and celeriac. In a large pot over medium-high to high heat, melt the ghee and brown the vegetables in it, about 5 minutes.
  2. Reduce the heat to medium to medium-high. Push the vegetables to the sides to roast the tomato paste in the center for a minute or so while stirring throughout. Then mix it with the vegetables.
  3. Now make some space for the paprika and roast it for half a minute or so. Be careful not to burn it.
  4. Deglaze with the wine and the broth and release the caramelization from the bottom of the pot. Bring everything to a boil.
  5. Add the chopped beef chuck and the bay leaves.
  6. Let simmer over a low to medium-low heat for about 2 hours. Do not put a lid on the pot.
  7. Remove the bay leaves and season to taste with salt and pepper.
  8. Optionally garnish with some freshly chopped parsley.
  9. Enjoy this dish by itself or with a side of potatoes, Spätzle, dumplings or pasta.

  12. You can store the dish in an airtight container for 5 days in the fridge or up to 6 months in the freezer. For best results, thaw overnight. Reheat on the stovetop or in the microwave.
