Preparation

  1. Serving size:
    0.40 oz (calculated)
    Notes: 1 cookie, about 2 in (5 cm) long, 1 in (2.5 cm) high, 3/8 in (1 cm) thick
  2. Temperature: 392 °F
  1. Mix the dry ingredients in a bowl.
  2. Add the three eggs and mix together. You will get a sticky, slightly wet dough.
  3. On a baking tray lined with parchment paper, form two roll about 1 inch (2.5 cm) high and 2 inches (5 cm) wide. Wet your hands slightly to avoid the dough from sticking to your hands.
  4. Bake for 15 minutes.
  5. While still warm, cut the rolls into slices about 3/8 inch (1 cm) wide.
  6. Spread on the baking tray and bake for another 12 minutes. The cantuccini are done when the edges start to brown.
  7. Tip: You can also add pistacchios or other nuts instead of whole almonds.
