Preparation
- Serving size:9.70 oz (calculated)Notes: 1/2 quesadilla; sufficient as a generous main meal
- Temperature: 400 °F
- Preheat the oven.
- Mix together the grated cheeses.
- Spread the cheese on a baking tray lined with parchment paper or a silicone baking mat.
- Aim for a circle with a diameter of about 12 inches or 30 cm.
- If you have a pizza pan, you can use it. Be sure to line it. The pizza pan makes it easier to get a circular shape.
- You can also draw a circle on the parchment paper, then flip it over and spread the cheese. The line on the back should shine through.
- Bake for 5 minutes or until the cheese is fully melted.
- Remove from the oven and let cool for a couple of minutes.
- On one half of the cheese crust, spread the shredded chicken, 3/4 of the sliced spring onions, chopped bell pepper and chopped tomatoes. Set aside the remaining spring onions for garnishing.
- Season to taste.
- Pull up the parchment paper underneath the other half of the cheese crust and flip it over the filling.
- Cut into quarters.
- Serve two quarters sprinkled with the remaining spring onions.
- Enjoy by itself or with a side of sour cream, salsa or guacamole.
- Instead of the mozzarella, you can also use Monterey Jack or Gouda.
- You can vary the filling, too. Use your favorite vegetables. For extra spice, add some sliced Jalapeno pepper. Or try different meats. You can even make it vegetarian.
