Preparation

  1. Serving size:
    9.70 oz (calculated)
    Notes: 1/2 quesadilla; sufficient as a generous main meal
  2. Temperature: 400 °F
  1. Preheat the oven.
  2. Mix together the grated cheeses.
  3. Spread the cheese on a baking tray lined with parchment paper or a silicone baking mat.
  4. Aim for a circle with a diameter of about 12 inches or 30 cm.
  5. If you have a pizza pan, you can use it. Be sure to line it. The pizza pan makes it easier to get a circular shape.
  6. You can also draw a circle on the parchment paper, then flip it over and spread the cheese. The line on the back should shine through.
  7. Bake for 5 minutes or until the cheese is fully melted.
  8. Remove from the oven and let cool for a couple of minutes.
  9. On one half of the cheese crust, spread the shredded chicken, 3/4 of the sliced spring onions, chopped bell pepper and chopped tomatoes. Set aside the remaining spring onions for garnishing.
  10. Season to taste.
  11. Pull up the parchment paper underneath the other half of the cheese crust and flip it over the filling.
  12. Cut into quarters.
  13. Serve two quarters sprinkled with the remaining spring onions.
  14. Enjoy by itself or with a side of sour cream, salsa or guacamole.
  15. Variations

  16. Instead of the mozzarella, you can also use Monterey Jack or Gouda.
  17. You can vary the filling, too. Use your favorite vegetables. For extra spice, add some sliced Jalapeno pepper. Or try different meats. You can even make it vegetarian.
