Preparation

- Separate the eggs and whisk the egg whites to stiff peaks.
- In a bowl mix the coconut flour, erythritol and baking powder.
- Add the egg yolks, milk and vanilla extract to the dry mix.
- Melt the butter and gradually add to the mix. Whisk until the dough is smooth.
- Fold in the egg whites.
- Bake in a waffle iron on medium to high heat.
- Serve with fresh fruit, apple sauce, your favorite jam or a scoop of ice cream.
