Preparation

  1. Serving size:
    0.52 oz (calculated)
    Notes: 1 cookie, about 7 cm or 2 3/4 in long
  2. Temperature: 320 °F

    Preparing the dough

  1. Whisk the softened butter with the Xylitol until the mix lightens visibly.
  2. Scrape out the vanilla pulp and add it to the mix. Alternatively, add about 2 tsp of vanilla extract.
  3. Add the egg.
  4. Add the almond flour and ground almonds.
  5. Bring the dough together with your hands.
  6. Wrap in cling film and chill for at least 2 hours in the fridge. If the dough is too warm, it is very sticky.
  7. Baking the cookies

  8. Once chilled, remove a portion of dough and roll to about 3 mm or 1/8 in thickness.
  9. Cut out snowmen using a cookie cutter.
  10. If the dough gets too warm and sticky, put it in the freezer while working on a still cold portion of the dough.
  11. Transfer the cookies to a baking tray lined with parchment paper. Add one pine nut nose to each cookie.
  12. Bake for about 10 minutes. The cookies are done once the edges start to brown.
  13. Decorating the cookies

  14. Once the cookies have cooled down completely, decorate the cookies.
  15. For the icing, whisk the egg white with some salt until you get stiff peaks.
  16. Add the lemon juice and powdered xylitol.
  17. With a brush, dab on the icing generously. Do not cover the nose or the hat.
  18. Let dry completely, about an hour.
  19. Melt a bit of chocolate and cover the hats with it. Use a toothpick to also add eyes and buttons.
  20. Let dry completely and enjoy.
