Preparation
- Serving size:0.52 oz (calculated)Notes: 1 cookie, about 7 cm or 2 3/4 in long
- Temperature: 320 °F
- Whisk the softened butter with the Xylitol until the mix lightens visibly.
- Scrape out the vanilla pulp and add it to the mix. Alternatively, add about 2 tsp of vanilla extract.
- Add the egg.
- Add the almond flour and ground almonds.
- Bring the dough together with your hands.
- Wrap in cling film and chill for at least 2 hours in the fridge. If the dough is too warm, it is very sticky.
- Once chilled, remove a portion of dough and roll to about 3 mm or 1/8 in thickness.
- Cut out snowmen using a cookie cutter.
- If the dough gets too warm and sticky, put it in the freezer while working on a still cold portion of the dough.
- Transfer the cookies to a baking tray lined with parchment paper. Add one pine nut nose to each cookie.
- Bake for about 10 minutes. The cookies are done once the edges start to brown.
- Once the cookies have cooled down completely, decorate the cookies.
- For the icing, whisk the egg white with some salt until you get stiff peaks.
- Add the lemon juice and powdered xylitol.
- With a brush, dab on the icing generously. Do not cover the nose or the hat.
- Let dry completely, about an hour.
- Melt a bit of chocolate and cover the hats with it. Use a toothpick to also add eyes and buttons.
- Let dry completely and enjoy.
