Whisk together the coconut flour, baking powder and xanthan gum. It's important that especially the xanthan gum is evenly distributed. Melt the grated mozzarella in the microwave at 600 Watt for 1 minute, stir, then microwave for another minute. If the cheese has not melted fully yet, continue in 30 second bursts until it has fully melted. Stir in the flour mix and the egg. It will not come together completely. Knead the dough for a couple of minutes with your hands until you get a smooth dough. Portion out the dough and roll each portion into a log about 8 inches or 20 cm long. Each portion will weigh about 60 g or a bit over 2 oz. Form a ring, pinching the ends of the log together. Mix your choice of topping and put it on a small plate or bowl. We like sesame and poppy seeds, you could also add onion or garlic powder and coarse salt. Brush the bagels with some water. Dip the bagels in the toppings, pressing lightly, so they stick nicely. Alternatively, you can also sprinkle the topping onto the bagels. Place the bagels on a baking tray lined with parchment paper or a silicone mat. Bake in the preheated oven for about 15 minutes or until the bagels have risen and are golden brown. Let cool before slicing open. Enjoy, for example with smoked salmon, cream cheese or guacamole, or a sweet topping such as jam. Despite it being based on cheese, the bagel does not taste cheesy. It's also quite fluffy. This makes a great breakfast or packed lunch / dinner.
